How to Make Homemade Chipotle-style Guacamole

Make the famous Chipotle-style guacamole at home with 6 simple ingredients: red onion, cilantro, jalapeño, lime juice, salt, and of course — quality avocados!


We know it, we love it, we pay extra for it — yes, I’m referring to Chipotle‘s famous guacamole. Fortunately, you will need just six simple ingredients to recreate this deliciousness at home! No mortar and pestle needed — just quality avocados, nicely diced red onion and jalapeño, chopped cilantro, freshly squeezed lime, and a pinch of salt. Let’s dive into how to make perfect guac every time, from proper avocado selection to relevant knife skills.

How do I select quality, ripe avocados?

  • Color – Look for deep green/almost black avocados to indicate ripeness. Uniform color throughout is important – too much variation indicates uneven ripeness. If they are bright green, they likely have up to 5 days to go. For some reason, I’ve found that my avocados do not ripen well at home. Ideally, you’ll want to buy avocados right when you are ready to use them (aka – when they are perfectly ripe). Keep in mind the ripeness window is short — typically 24 hours or less.
  • Firmness – Look for avocados that are neither rock hard, nor overly soft. Pick up an avocado and squeeze it in your palm — you should feel a light “give”, but your fingers should not be able to sink very far or form indents in the surface. Examine the whole avocado — if some spots are softer than others, that indicates bruising or uneven ripeness inside. A quality avocado has even, slight surface softness all around.
  • Texture – I’ve noticed avocados with the smoothest skin tend to be the highest quality. Bumpier skin is usually fine too. However, you’ll want to look out for any protruding ridges or dry, brown patches — while these avocados could still be fine on the inside, these inconsistencies in the texture could indicate inconsistencies on the inside, too.

Avocado Ripeness Scale

Bright Green – Very underripe. Will take around 5 more days to fully ripen.
Dark Green/Partially Black – Slightly underripe. There is still no “give” in the surface when squeezed. Needs 1 to 2 more days to fully ripen.
Black with Green Hues, Uniform Color Throughout – Perfectly ripe. There is a slight, soft, and even “give” to the surface when squeezed. It is not soft enough for indents to form on the surface when squeezed, and there are no spots noticeably softer than others.
Black with Red Hues – Overripe. Indents form when you press on the surface, indicating the fruit is too soft and past its prime. Parts of the fruit may almost feel hollow, when the ideal softness level should still feel dense.

How do I finely and evenly dice an onion?

First and foremost, before jumping into the steps, let me emphasize that you make sure your knife blade is sharp. A dull knife is very dangerous to work with, especially when making the unique cuts required for onion dicing. Set yourself up for success with a well sharpened chef’s knife that feels comfortable to work with!

First: Cut off the very top of the onion.
Second (optional): Cut off the stringy bottom of the onion, being careful to only cut the absolute minimum so the root stays intact.
Third: Slice the onion evenly in half through the root.
Fourth: Peel off the outer skin of each onion half.
Fifth: With the knife blade parallel to the cutting board, make 2 – 4 horizontal cuts through the onion, spaced about a half inch apart. Use a quick forward and back “sawing” motion with the knife and a firm hold on the top of the onion, making sure the cutting board is firmly in place. Be careful to stop cutting just before reaching the root. The more cuts from bottom to top, the finer the dice will be. Take your time and be patient with this step – having the knife in this position can be unnerving at first. Make sure the blade is indeed parallel to the cutting board surface, and not angled downward. In time, you will get used to this cutting technique and let go of the fear of cutting your hand.
Sixth: Make vertical cuts through the onion parallel to the root as close together as you can. Each slice should angle slightly toward the center of the onion, with the slice in the middle being straight up and down, as shown here.
Seventh (final step): Firmly holding the onion together with a claw grip, slice down the onion perpendicular to the root. The closer together your cuts, the finer the dice will be. Slice as close to the root as you can, and finely chop any uneven pieces that remain close to the root.

How do I dice a jalapeño pepper?

Again — make sure your knife blade is sharp!

Carefully make one slice down the length of the pepper. Peel the pepper open and flatten it out with your hands, allowing the pepper to naturally tear where it wants to. Remove the seeds and white ridges by slicing and scooping them out with a spoon.
Slice off the stem. Make very thinly spaced slices across the length of the pepper, then turn the pepper and finely slice across the width until you reach the bottom end of the pepper.

How do I finely chop cilantro?

Make sure to always wash your vegetables — I have found small bugs in my fresh herbs before, and a quick rinse will get rid of these plus any pesticides that may be coating your greens. I like to wash my cilantro before, rather than after chopping.

Squeeze the bunch together, and chop across the bunch, working from leaves to stems. Stop chopping when a half inch length of stem remains, and discard these ends. Unlike other herbs, cilantro retains the same flavor in its stems and leaves alike. Besides the bottom half inch, don’t leave the stems out!
Continue chopping throughout the cilantro pile until it reaches the even, fine texture you are seeking. There is no magic method here — just continue to reposition the greens so they all get as evenly sliced as possible.

How do I make this Chipotle-style guacamole?

  • Slice the avocados in half lengthwise. Swiftly bring the knife blade down so it sticks in the pit, and carefully twist the knife to remove it. Scoop out the avocado flesh with a spoon, and add to a large bowl. Repeat for all four avocados, and then mash with a potato masher or fork.
  • Add the diced red onion, jalapeño, and cilantro to the bowl. Slice the lime into 4 wedges, and squeeze all of their juice into the bowl. Mix to combine well.
  • Add salt, one pinch at a time, and mix well. Taste after each salt addition until all the flavors pop to your liking.
  • Enjoy!
