Smoothie, yogurt, and oatmeal weekday breakfast trifecta (gluten free and vegan)
Vegan Fruit, Nut, and Chocolate Coconut Yogurt
This is my favorite vegan breakfast. It packs the flavor and nutrients needed to start the day off right, with the minimum amount of effort possible. Catch me at the table eating as slowly as possible, savoring each bite.
Ingredients
- 3-4 heaping spoonfuls of unsweet coconut yogurt*
- 1/4 cup frozen blueberries
- 1/4 cup shaved almonds
- 1 handful dark chocolate chips
- Drizzle of agave or maple syrup
- Sprinkle of cinnamon, to taste
Instructions
- Spoon your desired amount of yogurt into a small bowl. Add your desired amount of toppings (the above amounts provide a frame of reference but feel free to adjust to your liking). I like to add the blueberries, almonds, and chocolate chips first, and then top it off with a drizzle of agave syrup and a generous sprinkling of cinnamon.

Notes
*I love the brand SO Delicious for vegan yogurt. I love getting the unsweet plain variety, and then I control how sweet I would like to make it with a plant-based syrup. One could also make it vanilla flavored by adding vanilla extract!
