Tomato, Arugula, & Artichoke Vegan Flatbread Sandwich

This light yet satisfying flatbread sandwich is the loaded up pizza fix you have been craving, ready in 15 minutes! Every time I eat at a restaurant, I am inspired. In this case, the inspiration arose from La Piadina, an Italian flatbread sandwich food truck and restaurant located in my wonderful city of Fort Collins, Colorado.

La Piadina serves a sandwich called “The Vegana,” which is exactly what it sounds like. The combination of artichokes, tomato, arugula, and mozzarella is a truly craveable combination. I knew immediately after eating my first sandwich that I needed to bring my own version to my audience, extending beyond Fort Collins.

I don’t know what vegan mozzarella they use, but I do know that Follow Your Heart and Miyokos are the best versions I’ve tried, and that’s what I needed to bring to my creation. Interestingly, coconut oil content is a strong determinant for how well a vegan cheese will melt, and high concentrations of each in both Follow Your Heart and Miyokos make them strong picks for a dairy-free, melty mozzarella fix.

I cannot claim to have matched the quality of La Piadina with my store bought tortilla, so the restaurant is definitely still worth a visit should you ever find yourself in the Fort Collins area. But for any busy person (most of us!), homemade bread is not in the cards most days. That doesn’t mean a delicious flatbread sandwich should be out of reach!

I recommend using essentially the largest tortilla you can find to make this recipe — you can see in the photos here that my tortilla did not fit corner-to-corner in my 10-inch skillet. Fortunately, no amount of delicious flavor was sacrificed. Best of all, no animals were sacrificed either!

Ingredients
  

  • 1 extra large flour tortilla
  • ½ cup shredded Follow Your Heart vegan mozzarella from block
  • A few handfuls of arugula
  • Heirloom tomato, sliced thin into half circles
  • Jarred marinated artichoke hearts, torn into smaller pieces
  • Black pepper to taste
  • Drizzle of extra-virgin olive oil
  • Drizzle of balsamic glaze

Instructions
 

  • Lay tortilla in front of you, and distribute a thin layer of shredded vegan mozzarella on one half of the surface.
  • On top of the cheese, layer arugula, tomato, artichoke hearts, black pepper, olive oil, and balsamic glaze (in that order), distributing the ingredients evenly to mostly cover the entire half. Keep in mind the arugula will shrink during cooking, so you can add a fair amount of it. You can also add less or more of any ingredient depending on your preference.
  • Fold the empty half of the tortilla over the toppings side, and preheat a large skillet on medium. Once hot, add a drizzle of olive oil. Let the oil heat up until consistency thins, then place the folded tortilla in the pan. Place a smaller pan on top of the tortilla to press it down, and allow to cook on the first side 3-5 minutes until golden brown.
  • Flip the assembly to the other side, press down again, and cook another few minutes until golden brown on the second side.
  • Remove from heat, cut in half, and enjoy!
